Gluten Free Fortune Cookies

Did you know that eating cookies can bring you good luck?  Especially since 2011 is the Year of the Cookie.

I baked these gluten free fortune cookies for my Mom’s birthday with special messages inside like “To a 90 year old, you’re young” and “What’s another decade?” and “At least you get to eat cake.”

To make the cookies, I used this recipe but substituted all-purpose gluten free flour plus 1/4 teaspoon xanthan gum.  For a first attempt at fortune cookies, they turned out good.  Next time, I won’t make as many at one time since the cookies need to be shaped while they’re still hot.
