Gummy worms dig these compost cookies

Compost happens. And it can be delicious. Make flour by grinding gluten free oats in a food processor or place oats in a well-sealed ziploc bag and use a rolling pin to grind up a bit. Popcorn flour or almond meal can be subbed for part of the oat flour. Make popcorn flour by grinding popped corn in a blender or by crushing popcorn in a ziploc bag.

Free of wheat and dairy, this simple cookie recipe makes recycling fun and tasty.

Composting Cookies

In a small bowl, mix wet ingredients:

  • 1 ripe banana, mashed (about 1/2 cup)
  • 2 TB canola oil
  • 3 TB honey or maple syrup
  • 1 tsp pure vanilla extract

In a separate bowl blend dry ingredients:

  • 1 cup oat flour
  • 3 TB cocoa powder
  • 1/4 tsp each – baking powder, cinnamon, salt

Add wet ingredients to dry and stir well. Fold in about 1 cup compost extras:

  • granola
  • almonds
  • raisins
  • chocolate chips
  • pretzels
  • donut seeds

Use a teaspoon to scoop dough. Roll dough into balls and coat with more composting material.  Bake for about 10 minutes in a 350 degree oven. Yield: 12-15 small cookies for happy campers.  Recycle leftover cookies into a crust for dirt pie.
