Cheese straw crackers

Well, they started as straws.

After piping some cheese straws from a ziploc bag, I decided to make crackers instead.  Straws just seemed too fussy.

This is where I should be writing something interesting. But poor planning, i.e., life got in the way. That, plus I broke up with interesting eons ago.

Gluten free and low carb, these cheese crackers are great for a little nip. Cheers!

Cheese Straw Crackers

Combine in a medium bowl:

1 and 1/4 cups almond meal

1 tablespoon sugar

3/4 tsp baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon ground chipotle pepper

Cut in:

1/4 cup spectrum organic shortening, chilled

Add and mix thoroughly:

4 oz. sharp cheddar cheese, grated

1 teaspoon spicy brown mustard

Let dough chill in fridge for about 10 minutes.  Then roll out dough between sheets of parchment paper. Lightly score crackers and prick with a fork before baking in a 325 oven for about 10 – 12 minutes.

  3. Love it! So, can I ask this: almond meal – is it the same texture as ground almonds or almond flour? AND, thank you for a great gluten free cracker recipe, been wanting one, but didn’t like the ones I’ve tried with the GF flour. Can’t wait to try this. {{{{Clink}}}}

    • I used a finely ground blanched almond meal that’s closer to flour actually.
      And why am I now thinking about a chocolate hazelnut flour cracker? Because you are the Nutella queen, that’s why!
