Gluten Free Cake Donuts

What is it about a simple cake donut that’s so enticing?  If you’re fond of not overly sweet treats, here’s a great baked donut recipe.  I like the donuts finished with a coating of cinnamon sugar, but a chocolate glaze might also be nice on occasion.

Gluten Free Cake Donuts

Combine the dry ingredients in a large bowl:
2¼ cups gluten free flour
¾ cup sugar
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon xanthan or guar gum
¼ teaspoon nutmeg, optional
Pinch of baking soda

Cut into dry ingredients:
¼ cup organic palm shortening, chilled

Combine the wet ingredients, then add to large bowl:
¾ cup soured milk
2 tablespoons oil
2 tablespoons applesauce
2 eggs
2 tablespoons pure vanilla extract

Grease donut pans (even nonstick). Fill each donut cup approximately 3/4 full. Bake 10-12 minutes at 350 degrees. Allow to cool slightly before removing from pan.   To coat, dip donuts in melted butter, then roll in powdered sugar or cinnamon sugar. Makes 12-15 donuts.

Chocolate glaze
1 cup powdered sugar
4 tablespoons unsweetened cocoa powder
½ teaspoon corn syrup
½ teaspoon pure vanilla extract
2 or 3 tablespoons water or coffee

Donut Baking Tips

  • A combination of gluten free flours usually gives the best result. Pick up a ready to use flour blend or use your favorite all-purpose mix. Get more information about gluten free flour blends here.
  • To sour hemp, almond, dairy or any kind of milk, pour 2 teaspoons of apple cider vinegar into a measuring cup and add milk to measure ¾ cup. Stir and let sit for about 10 minutes.
  • If you’re vinegar averse, make donuts with unsoured milk. The donuts will still be delicious.

  3. Can coconut oil be used in place of the palm shortening?

    • That’s a good question, Heidi. Since coconut oil is fairly solid at room temp, it might be a good substitute. I haven’t tried it in this recipe. Please let me know if it works for you!
