Does the world need another recipe for rice crispy treats? Of course not. But here’s how to take the basic recipe and make it better and easier.
Browning, not just melting, the butter adds an extra dimension of flavor. But it’s much easier to do in the microwave. Place half a stick of butter in a bowl, cover, and microwave on high for 2 minutes and 30 seconds (in a 1500 watt oven).
The little brownish bits that settle at the bottom are tasty, but you might want to strain those off and use just the liquidy part of the butter. If you’re browning butter in the microwave for the first time, keep an eye on it. Cook time will vary depending on how powerful your microwave is. Marshmallows can also be melted in the microwave. They expand in the microwave, so keep that in mind when selecting your bowl. About a minute is all it takes.
However you choose to prepare your treats, be sure to add vanilla extract and a pinch of salt. Your taste buds will thank you.
Better Rice Crispy Treats
In a microwave safe bowl, brown:
4 tablespoons butter
Add and melt:
10 ounces marshmallows
After removing from heat, stir in:
1 teaspoon pure vanilla extract
Pinch or two of salt
5 cups Rice Krispies
Press into a greased 9 x 9” pan for thick and chunky treats or a 13 x 9” pan for slender ones. Let cool before slicing. Extra treats are best stored in the freezer to eat as needed.
