Instant German Chocolate Cake

Even though this recipe is optimized for the microwave, cakes can be baked in a 350 degree oven for 20-22 minutes. If you don’t have mini bundt pans, bake the batter in 6 ounce ramekins or mugs. For mug cakes, I’d prepare cake filling first then add topping before baking. But either way would be good.

It’s cake, after all.

For these gluten free chocolate cakes, I used silicone mini bundt pans. Love how the finished cakes pop right out without sticking! They can be hard to find, but I bought individual mini bundt pans many years ago at Kohl’s. Similar pans are available online. Be sure to grease pans if you’re not using silicone molds (and in case you plan on removing cakes from pan for serving atop a popular retro board game on Valentine’s Day).

Instead of icing after baking, the caramel nut topping bakes onto cake as it cooks in the microwave. Like these muffins, the inspiration for the topping comes from traditional sticky toffee pudding. That’s because the most delicious way to make caramel is with dates. After stirring baking soda into the heated dates, the mixture will bubble a bit and get lighter in color. Go ahead and taste it.  Sweet mystery, huh?

Caramel Nut Topping

Heat in microwave safe cup for 25 seconds:

4 dates, chopped

4 teaspoons water

2 teaspoons butter

Add and stir:

Pinch of baking soda

Add:

4 teaspoons shredded coconut

2 teaspoon pecans, chopped

Divide topping evenly and spread in bottom of 2 mini bundt pans. Now for the cake.

German Chocolate Cake

Melt in a microwave safe cup:

1 tablespoon butter or coconut oil

Add to melted oil and stir:

1 egg

3 tablespoons milk

½ teaspoon pure vanilla extract

Add to cup and stir well:

2 tablespoons coconut sugar

1 tablespoon coconut flour

1 tablespoon almond meal

1 tablespoon cocoa powder

1/4 teaspoon baking powder

Pinch of each: salt and cinnamon

Pour batter over topping in 2 mini bundt pans. Cook 2 cakes for about 1 ½ minutes at full power (in a 1500 watt oven). Cook time will vary depending on how powerful your microwave is. Wait a few minutes before removing cakes from mold onto serving plate. Yield: 2 mini bundt cakes

    This looks fabulous Linda! I feel wrong, but I would cut the coconut out. And I miss my (your) pumpkin and choc chunk scones still. But I wanted to mention that I found a 2 pk of Cocoa Crinkles in the back of my freezer. And I have been saving/hiding them (my gluten eating children will sneak them) for the right occasion. Well, I am thawing them (or just 1) today to celebrate this lovey dovey commercial day. My husband is off preparing to deploy to Afghanistan, so I feel I deserve it today. So thanks Linda, I am still enjoying your yummies, without dirtying any pans. And I love your blog. I hope you are doing fabulous!
