When cake is a celebration, bring out the sterling and fine china! But when dessert is an essential (and not always well-planned) part of daily life, say hello to the microwave.
For this single serving pineapple upside down cake, I used my favorite silicone mini bundt pan. Similar pans are available at Michaels and online, but I still haven’t found more like the ones I already own. If you don’t have a mini bundt pan, use an eight ounce mug.
Usually, I melt coconut oil for quick cakes, but decided to use olive oil instead just for fun. Delicious! Use your favorite all purpose gluten free flour, like the one from King Arthur or Pamela’s, or create your own custom blend. I love hemp milk for baking, but grab whatever is handy. Even though this recipe is optimized for the microwave, you could heat up
your house an oven to 350 degrees and bake the cake for about 20 minutes.

- 1 teaspoon brown sugar
- 1 slice pineapple (or 2 tablespoons pineapple chunks)
- 1 tablespoon olive oil
- 2 tablespoons milk (hemp or almond works well)
- 1 tablespoon pineapple juice
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon baking powder
- Pinch of baking soda
- 2 tablespoons sugar (brown or coconut)
- 4.5 tablespoons gluten free flour
Sprinkle brown sugar in the bottom of an 8 ounce microwave safe mug. Place pineapple on top of sugar.
In a separate cup, mix: oil, milk, pineapple juice, pure vanilla extract, baking powder, baking soda, sugar, and gluten free flour.
Pour batter over pineapple in mug. Set on a paper towel in the microwave, just to be on the safe side. Cake will puff up and could potentially spill over while cooking.
Cook for 1 minute at full power (in a 1500 watt oven). Cook time will vary depending on how powerful your microwave is. Let cool a bit before removing from mug.
Make 2 small cakes by dividing batter and pouring over pineapple slices in two 6 ounce ramekins. Cook two cakes for 75-90 seconds at full power.
Directly above is a cake that I made in an actual mug. I didn’t grease the mug before cooking, so it really surprised me how easily it popped out.
