Chocolate Pudding in a Mug

Note to self: Say no to silly challenges.

After giving up chocolate pudding for a week, I eased back into my habit with a single serving of pudding. How’s that for restraint?

Lite coconut milk works well for this easy microwave recipe. Keep in mind that cook time will vary depending on how powerful your microwave is, so you may need to adjust things a bit.

Adapted from a chocolate pudding recipe posted here.

Chocolate Pudding in a Mug

2 tablespoons sugar
1 tablespoon unsweetened cocoa
1 tablespoon cornstarch
1/8 teaspoon salt
1/2 cup coconut milk
1/2 teaspoon pure vanilla extract

In a microwave safe cup, blend sugar, cocoa, cornstarch, and salt. Add coconut milk gradually, stirring to break up any clumps. Microwave on high for 30 seconds. Stir. Cook for an additional 30 seconds (in a 1500 watt oven).  Add vanilla extract. After stirring, let pudding chill in the fridge for an hour, or at least cool down a bit. Yield: 1 single serve chocolate pudding

Maybe you need a little something to go with the pudding? Here’s how to make a cookie in two minutes.

Another winning recipe. I tried this tonight and it was fantastic! And so quick! I DO recommend following your instructions and allowing it to cool in the fridge. If you are greedy like me and try to eat it hot out of the microwave, you will regret it. It sticks to the roof of your mouth like peanut butter, only like molten hot peanut butter. Lesson learned.

I am about to whip up my second one tonight! 🙂

  2. Could this work with other starches like arrow root or tapioca?

  3. Is there anything other than coconut milk you can use? I would like to make there’s tomorrow and I don’t have any. Thanks. fran

  4. If you double the recipe, like I did, remember to DOUBLE THE COOK TIME. I was so confused why after 30 seconds, stir, and 30 seconds, I still only had hot chocolate. Decided to put it in for another minute and finally I had pudding. I only waited about 30 minutes for it to cool in the fridge. Man oh man, this hit the spot. So delicious. Definitely bookmarking this for later… maybe tomorrow even 🙂
