Peach Pot Pies

Before getting back to dinner, I should mention that arrowroot is a great thickener for individual pies. There are so many ways to make a fruit filling – with cornstarch, tapioca, potato starch, or a combination of gluten free flours. Of course, fruit being pretty awesome as is, a rustic pie is good without any kind of thickener, too.

If your peaches are very sweet, reduce the sugar in filling slightly. An easy pie hack – sprinkle topping over fruit and press down firmly to form a makeshift crust. Don’t forget to set pies on a cookie sheet before baking. It’ll catch bubbling spillovers in the oven.

Top with roasted peach ice cream or serve unadorned. You can’t go wrong with pie.

Peach Pot Pie

25 minutes

4 peach pot pies

A delicious way to use up extra fruit! Gluten free, vegan, and super easy.

Ingredients

  • Filling
  • 2 cups sliced peaches
  • 2 tablespoons sugar
  • 2 teaspoons arrowroot
  • 1/2 teaspoon cinnamon
  • Topping
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons sugar
  • 3 tablespoons almond meal, packed
  • 3 tablespoons coconut flour
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 1/2 teaspoon almond extract, optional

Instructions

Preheat oven to 350 degrees.

For filling, blend peaches, sugar, arrowroot, and cinnamon. Divide filling between 4 ramekins (or mini cake pans). Set aside.

For crust topping, combine melted coconut oil, sugar, almond meal, coconut flour, baking soda, salt, and extract, if you're inclined.

Divide dough into 4 pieces. Roll each piece into a ball and flatten between sheets of parchment paper. Refrigerate flattened dough for a few minutes, then use a knife or spatula to lift crust from parchment. Top each ramekin with pie crust and place on a cookie sheet.

Bake for 25 minutes. Let cool slightly before serving.
