Creamy Chocolate Pudding – serve chilled or freeze pudding in paper cups and add a stick for vegan fudgy pops. This pudding is one of my favorite recipes ever.

Roasted Peach Ice Cream – easy vegan peach ice cream made with coconut milk. But without a machine.

Chocolate Coconut Cupcakes – ethereal chocolate cupcake made with coconut flour. Without icing, they’re highly portable and well, heavenly.

Lemon Cake Donuts – donuts are the new cupcakes, yes? When sliced horizontally, they’re perfect for strawberry shortcake.

And because you may need some liquid refreshment . . .

Just like an old-fashioned soda, only not at all. Tangy, vegan, and very refreshing coconut creamsicle sodas.

But wait, here’s a savory bonus tip.

To bake any leafy green – drizzle with olive oil, sprinkle with sea salt, and heat in a 300° oven for 20 to 25 minutes.
