Did you ever want caramel apple cake, but just enough for a single serving? If so, you’re in luck. Besides being fun to make, a quick dessert is great for emergencies.
Use your favorite all purpose gluten free flour, like the one from King Arthur, or create a custom blend. This recipe is optimized for the microwave, but you could bake the cake for about 20 minutes in a 350 degree oven.
For this single serve apple cake, I used a favorite silicone mini bundt pan. Similar pans are available at Michaels and online, but I still haven’t found more like the ones I already own. If you don’t have a mini bundt pan, use an eight ounce mug.
The salted caramel topping really makes this cake special. Seriously, you should go make it right now.

- Caramel Sauce
- 2 tablespoons coconut milk
- 1 tablespoon coconut sugar
- Pinch of baking soda
- Apple Cake
- 1 tablespoon coconut oil
- 1/3 cup finely chopped apple
- 1 tablespoon coconut milk
- 1 tablespoon applesauce
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons sugar (brown or coconut)
- 1/4 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- Pinch of nutmeg
- 4.5 tablespoons gluten free flour
- Sea salt for sprinkling on top of caramel sauce
For caramel sauce - combine coconut milk and sugar in an 8 ounce microwave safe cup. Heat on medium power for 30 seconds. Stir. Heat for another 10 seconds on medium power. Remove from microwave and stir in a pinch of baking soda. Set aside.
For cake - in a microwave safe cup, combine oil and chopped apple. Microwave on medium power for 1 minute.
Add milk, applesauce, vanilla, sugar, cinnamon, baking powder, baking soda, nutmeg, and flour. Stir well. Pour batter into a silicone mini bundt cake mold or use an 8 oz. mug. Set on a paper towel in the microwave, just to be on the safe side. Cake will puff up and could potentially spill over while cooking.
Cook for 1 minute at full power (in a 1500 watt oven). Cook time will vary depending on how powerful your microwave is. Let cool a bit before removing from pan. Pour caramel sauce over cake and sprinkle with sea salt.
