Here’s an easy recipe for a single serve deli-style bun. Fluffy and light, it’s amazing how a simple bun can elevate even the most mundane lunchtime offering.

The best part: it’s ready in about twenty minutes. Or two, if you prefer the instant gratification of microwave baked goods.

Gluten free, low carb, and better than you’d expect for a quick recipe. Caraway seeds and a hint of cocoa powder give this bun a rye-style vibe.

Low Carb Rye-Style Bun for One

Here's the rye-ish version of the most popular single serving recipe on this site - Low Carb Bun for One. Enjoy!


  • 1 tablespoon coconut oil or butter, melted
  • 1 egg, slightly beaten
  • 1 tablespoon coconut milk or cream
  • 1 tablespoon almond meal, packed
  • 1 tablespoon coconut flour, packed
  • 1/2 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon caraway seeds
  • 1/8 teaspoon baking soda
  • Sesame seeds for topping, optional


Blend oil, egg, milk, almond meal, coconut flour, cocoa powder, caraway seeds, and baking soda.

Pour batter into a greased 4" cake pan. Smooth top with a dampened spatula. Sprinkle with sesame seeds. Bake for 18-20 minutes in a 350 degree oven.

Or, cook bun in the microwave. Grease a 4" round microwave safe dish. Cook at full power for 55 - 60 seconds (in a 1500 watt oven). Cook time will vary depending on how powerful your microwave is.
