Simple Single Layer Vanilla Cake

Need cake? If you’re like me, the answer is always YES. Here’s an easy recipe for a single layer, gluten free vanilla cake.

This tender cake mixes up quickly in one bowl. Adding to the ease – I used Pamela’s Artisan Flour Blend. This is a nice product that works well as a cup-for-cup replacement in recipes. If you sub a different all-purpose gluten free blend, you may need to add a small amount of guar gum.

I like to top this simple cake with yogurt or whipped cream and fresh fruit. Hope your summer is full of sweetness.

Single Layer Vanilla Cake

1 single layer vanilla cake

Easy to mix by hand in a few minutes! This simple gluten free cake is great topped with fruit for a summer dessert.

Ingredients

  • 1 and 1/4 cups gluten free flour
  • 1 cup sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1/2 cup milk, any kind
  • 1/2 cup olive oil
  • 1 tablespoon pure vanilla extract

Instructions

Grease a 9 inch round pan.

In a large bowl, combine gf flour, sugar, baking powder, and salt.

In a separate cup combine eggs, milk, oil, and vanilla. Stir to blend liquid ingredients thoroughly, then blend liquid ingredients into dry ingredients.

Pour batter into prepared pan. I like to let the batter rest in the pan for about 15 minutes before baking.

Heat oven to 350 degrees. Bake cake for 35-38 minutes, until a toothpick inserted comes out clean.
