Oatmeal Packet Cookies

I’ve been spending the summer with a favorite lazy-baker treat and thought I’d share. You’re probably familiar with those handy oatmeal packets from Glutenfreeda. Over the past few months, I’ve grown to enjoy the packet with raisins. What can I say, but we all change, don’t we?

Banana oatmeal packet cookies are a fun way to fill your sweet needs. And they go great with a smoothie for breakfast.

Speaking of smoothies, I got a Magic Bullet blender. Finally. Don’t know what took me so long, but I use it every day and love it.

Oatmeal Packet Cookies

4 small cookies

  • 1/3 cup ripe banana, mashed
  • 1 gluten free oatmeal packet
  • Pinch of cinnamon, optional
  • Garnish of nuts or chocolate chips, optional


In a mug, combine mashed banana with the contents of one gluten free oatmeal packet.

After blending banana and oats, place mixture in fridge for 30 minutes.

Line a small pan with parchment paper. Preheat oven to 350 degrees.

Use a small scooper to drop 4 or 5 dough balls onto parchment. Top with chopped nuts or chocolate chips if you like.

Bake for about 12 minutes. Let cookies cool before eating.
